
What do you get when you’ve been craving apple fritters, but are too lazy to make them and want something healthier? The answer is, Apple Fritter Bread!! This bread is amazing, because it has all of the flavor of an apple fritter, but it isn't fried and unhealthy. The apples and cinnamon really stand out in this, and the soft texture of the bread brings everything together. The glaze on the top gives the bread a nice, somewhat chewy texture, that will immediately remind you of an apple fritter.

After cleaning my counter, I preheat my oven to 350 F, then I started working on the apples. I washed the apples thoroughly, then peeled and chopped them into small pieces. The apples don’t have to be chopped into fine pieces, they just have to be small. I set the apples aside, and started working on the bread. I mixed together my butter, granulated sugar, eggs, vanilla extract, and almond milk in a large bowl until it was well combined. Then I folded in my flour and baking powder until it was smooth. I set that aside, and worked on the brown sugar/cinnamon mixture. To make the brown sugar mixture, combine 3 tablespoons of brown sugar and 1 teaspoon of ground cinnamon together in a small bowl. Now that almost everything is prepared, I go back to the apples and toss them in a tablespoon of granulated sugar and a teaspoon of cinnamon.Now that all of my ingredients are ready, I greased my bread pan and add half of the bread mixture then add half of the brown sugar mixture, then half of the apple mixture. I added the last half of the bread mixture, then the apple mixture, then the cinnamon mixture. I gently pat the apples into the bread, then swirl the cinnamon sugar mixture through the bread and apples with a knife. I bake my bread in my preheated oven for 50-60 minutes, until the knife that I inserted in the middle came out clean.
Once my bread was done, I let it cool completely before I glazed it. Once the glaze was hardened, I took my pictures, then immediately dug in. This bread was absolutely amazing, and so easy to make. I hope you enjoy it!!

Brown Sugar/Cinnamon Mixture
3 tbsp brown sugar
1 teaspoon ground cinnamon
Bread Loaf
1/2 cup butter, softened
2/3 cup granulated sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups gluten-free all-purpose flour
2 teaspoons baking powder
½ cup unsweetened almond milk
Chopped Apples
2 large apples of any kind, peeled, and chopped into small pieces
1 tbsp granulated sugar
1 tsp cinnamon
Glaze
1/2 cup of powdered sugar
1-2 tablespoons almond milk
Directions
Preheat oven to 350 F.
In a large bowl mix together eggs, butter, granulated sugar, vanilla extract, and almond milk until well combined.
Add the all-purpose gluten-free flour, and baking powder to the mixture, and fold it in until well combined, and set aside.
Peel and chop the apples into small pieces, then add 1 tablespoon of granulated sugar and 1 teaspoon of cinnamon to the apples, and mix until coated evenly.
In a separate bowl, mix together the brown sugar and cinnamon.
Line a bread pan with parchment paper, or grease it with oil or butter.
Pour half of the bread mixture into the bread pan, then add half of the brown sugar mixture, and half of the apple mixture. Pour the remaining half of the bread mixture on top, add the remaining apple mixture, and sprinkle the rest of the brown sugar mixture on top. Gently pat the apples in the bread batter, then take a knife and swirl the brown sugar through the apples and bread batter.
Bake in the preheated oven for 60 minutes, or until a knife or toothpick comes out clean.
Once the bread is done, let it cool completely before glazing it.
To make the glaze, mix together a ½ cup of powdered sugar with 1-2 tbsp of almond milk.
Add the glaze to the completely cooled loaf of bread, let it harden, then serve.
