
This chicken salad recipe is super easy and basic. You can eat this using just the base recipe, or you can add some of the extras that I've written down. I personally love to eat this plain, I know I'm kind of boring, but sometimes I get lazy and want something that is super easy to make. This chicken salad is meant to be a little more sweet than savory, so if you want something more savory or with more spice, this recipe is probably not for you.
I started by cooking my chicken. I used chicken thighs, and I baked them. I usually add some seasonings, like garlic powder, salt, and pepper. Sometimes I don’t add anything. Because of all the other flavors in the chicken salad, you don’t really taste the seasoning you put on the chicken, so if you are feeling a little lazy, it is okay to not season the chicken. I use a rotisserie chicken sometimes too, that makes it a lot easier. While my chicken is baking, I chop up my celery and green onions, and cut my red grapes in half. I add all of my chopped ingredients into a bowl, then I shred my chicken thighs. Once I finished shredding my chicken, I added it to the other ingredients. Then I measured out the sour cream and mayonnaise and added it to the bowl with all the other ingredients. I mixed everything together until it was well combined. I like to use my chicken salad to make a sandwich, make a salad, or just eat it by itself.

Extras To Add/Replacements
Parsley- Parsley adds a clean,earthy,peppery flavor.
Nuts- Nuts add a nice crunch and extra bit of flavor. You can use almonds, walnuts, and pecans. Toasting them brings out the flavor even more.
Greek Yogurt- You can use greek yogurt instead of sour cream. I’ve used both, and I think they both taste great.
Red Onion- Adding some red onion will give the chicken salad a little bit of spice and crunch.
Dried Cranberries- If you like dried cranberries, then you’ll love them in a chicken salad. They add a nice chewy texture, and some extra sweetness.

How To Eat It
Salad- You can make even more of a salad by adding the chicken salad mixture to some romaine, iceberg, or arugula. I personally think this is one of the best ways to serve it.
Sandwich- Make a sandwich out of your chicken salad by using some good quality bread, some lettuce, and whatever else you’d like to add.
By itself- This chicken salad is amazing by itself if that is what you prefer.

Ingredients
6 sticks of celery, chopped
2 cups red grapes, cut in half
1 bunch chopped green onions
5 skinless chicken thighs or about 2-3 cups of chicken, shredded
1 cup sour cream
½ cup mayonnaise
Instructions
Start by cooking your chicken or pulling the meat off of a rotisserie chicken.
Chop the celery, grapes, and green onions.
In a large bowl add the chicken, grapes, green onions, celery, sour cream, and mayonnaise. Mix the ingredients together until everything is evenly covered.
Serve it in a sandwich, in a salad, or eat it by itself.
